Chickpea Salad
Need a quick and healthy lunch to whip up?
This Chickpea Salad is just what you need!
It’s an every week staple at our house because it is so delicious, easy to make, and if there are everything bagels in the pantry - that’s always an added bonus.
For the Dressing:
4 Tbsp mayo
1 Tbsp Dijon or spicy mustard
1 tsp maple syrup
Sprinkle of fresh cracked pepper
Here’s what you need:
2 15.5 oz cans chick peas (*preferably low sodium)
6 celery stalks
1/2 small red onion
handful of grapes
Everything but the Bagel Sesame Seasoning Blend
*Optional: add walnuts or pecans for a nutritious crunch
Here’s how YOU do it:
Rinse chickpeas, celery, and grapes.
Place chickpeas in a flat bottom bowl. Using a meat masher (or a large fork) mash the chickpeas. I like to leave about 25% whole.
Rough chop the red onion and celery.
Quarter cut the grapes.
Combine chickpeas, red onion, grapes and celery.
In a small bowl, combine dressing ingredients. Then, pour and incorporate with chickpea mix.
Get a big spoonful, and taste!
Serve as a sandwich or with crackers!
