I don’t know about you, but if I don’t prepare a healthy snack for the week I tend to snack on things I later wish I didn’t. Once a week, I try to prep one sweet snacking treat to satisfy my sweet tooth. These granola balls hit the spot- they are sweet, filling, and a lot healthier than other option. I hope you enjoy. Here’s what you need:

For the Dry Mix:

For the Wet Mix:

1/2 cup no-salt added almond butter

1/2 cup date syrup (or maple syrup)

1/2 raw honey

2 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp cardamon

2 cups rolled oats

1 cup dried cranberries

1/2 cup dried blueberries

1/2 cup hemp seed

Here’s how you do it:

  1. Grab a medium bowl and stir together oats, cranberries, blueberries and hemp seed.

  2. In a small saucepan, combine the wet mix ingredients: almond butter, date syrup (or maple syrup), raw honey, vanilla extract, cinnamon, and cardamon. Stir over medium heat to blend well. Once blended, mix into dry mix - grab a large spoon or get your hands a little messy and dive into the mix!

  3. Make little balls and place in a glass baking pan. If you prefer squares - spread mixture into a pan prepped with parchment paper and press down firmly. After cooling, cut into squares.

  4. Cool for at least 30 minutes.

    *Keep in an airtight container in the refrigerator up to 1 week.
